Provençal Style Chicken

Chicken that just falls apart, loads of delicious vegetables in a perfectly flavoured tomato sauce.

A great recipe to use up fridge and stock ingredients - you can use whatever vegetables you have and any beans you have.

Step 1

Remove the skin from the chicken thighs.

Take a large stock pot and add a glug of olive oil. Add the chicken to the pan on a high heat and brown -you aren’t looking to cook the chicken here, just turn the outside golden brown, as this is where the flavour comes from. Cook for a couple of minutes.

Step 2

Slice the onions.

Dice the vegetables into equal sized pieces, around 5cm.

Remove the chicken from the pot and set aside. (Don’t clean the pot.)

Add the onions to the same pot and cook until soft, around 5minutes. Then add the vegetables and garlic and cook for a further two minutes.

Step 3

Once the vegetables have started to soften add the wine and bay leaf and cook for 1 min.

Now re-add the chicken, tins of tomatoes, and drained beans. Stir well, turn down the heat and leave to simmer for 45mins-1 hour. The chicken will be super tender and falling off the bone.

Step 4

Serve with a dollop of yoghurt and chopped fresh parsley.

  • 750g chicken thighs

  • 2 courgettes

  • 2  red pepper

  • 1 aubergine

  • 2 red onions

  • 3 cloves garlic

  • 1 bay leaf

  • 150ml red wine

  • 2 tins tomatoes

  • 1 tin butter beans
